Cooking Instructions:
For the Cake:
1. Butter the bottom of two 20cm cake tins and preheat oven to 180oC
2. Mix together the flour, sugars, cocoa, baking powder and salt in a large bowl. In another bowl whisk together the eggs, sour cream and vanilla until blended. In a third bowl, using an electric mixer, beat together the corn oil and melted butter until blended, then beat in the water. Add the dry ingredients all at once to the mixture and mix together on a slow speed. Add the egg mixture and blend together.
3. Pour the mixture between the two cake tins and bake in the oven for 50-55minutes or until a cake tester comes out clean.
4. Cool the cakes on a wire rack in the tins for 15 minutes then turn out onto the rack to cool completely.

For the Fudge Icing:
1. Melt the chocolate in the microwave (2-3minutes should be okay but careful no to burn it) or melt over a pan of hot simmering water if preferred - let the chocolate cool slightly.
2. In another bowl beat the butter until it is soft and creamy and add the sieved icing sugar. Beat until light and fluffy. Gently add the chocolate and vanilla extract and mix together until smooth and glossy. Add more icing sugar if you feel it is too runny or prefer a thicker coating for the cake.
4. Sandwich the cakes together using about a quarter of the icing mix then ice the top and sides of the cake.

For the Cake:
400g Plain Flour
100g Light Muscovado Sugar
250g Caster Sugar
2 tsp Baking Powder
50g Good Quality Cocoa Powder
1/2 tsp Salt
3 Eggs
142ml Sour Cream
175g Unsalted Butter (melted)
1 tablespoon Vanilla Extract
125ml Corn Oil
300ml chilled water

For the Fudge Icing:
175g Dark Chocolate (70% cocoa minimum)
250g Unsalted Butter at room temperature
275g Icing sugar (plus extra if needed)
1 tablespoon Vanilla Extract
