Cooking Instructions:
1. Peel and cut the potatoes into medium chunks and boil for approximately 15minutes, until soft. Drain and mash with a knob of butter and dash of milk - make sure its not too runny or smooth or it won't stick. Leave to cool.
2. Poach the cod and salmon in the milk (seasoned with pepper) on the hob for approximately 15 minutes, until it flakes away at the touch.
3. Loosely flake apart the cod and salmon and add to the cooled mashed potato.
4. Add the juice of the lemon, a pinch of pepper and the parsley to the mixture and mould into patties. Tip: Use damp hands to ease the moulding process.
5. Blend the slices of bread in a food mixer to create breadcrumbs and place on a plate.
6. Dust the fishcakes in the flour, dip into the beaten eggs and cover in breadcrumbs.
7. Grill in the oven for approximately 10 minutes each side until golden brown.
Ingredients:
250g Cod
250g Salmon
500g potatoes (approx 6 potatoes)
250ml Milk
2 Eggs, beaten
1 Large handful chopped fresh parsley
1 Lemon
50g Plain flour
Ground Black Pepper
4-5 Slices of Bread (white or wholemeal depending on preference)
