Cooking Instructions:
1. Lightly butter the ovenproof dish and arrange the apples in the bottom. Spoon over the mincemeat & splash of sherry. Sprinkle over the lemon zest and juice.

2. Make the sponge topping: put the butter, sugar, eggs, flour, baking powder, and milk in a large bowl and beat until smooth and well blended. Stir in the raisins and ground cinnamon. Spoon on top of the apple slices, and level out the surface.

3. Bake in a preheated oven at 180C (350F, Gas 4) for about 45 minutes until the sponge topping is well risen, golden and springy to the touch. Serve hot with double cream. Yummy!
Ingredients:
butter for greasing
500g (1lb) cooking apples, quartered, cored, peeled and sliced
90g (3oz) mincemeat & splash of sherry
grated zest and juice of 1 lemon

Sponge Topping:
125g (4oz) softened butter
125g (4oz) caster sugar
2 eggs, beaten
125g (4oz) self-raising flour
1 tsp baking powder
2 tbsp milk
60g (2oz) raisins
1 tsp ground cinnamon
