Aromatic Crab Cakes

Blend the breadcrumbs, cream, eggs, oil and Tabasco together in a bowl. Add the remaining ingredients and mix together thoroughly.
Divide the mixture into 4 equal patties.
Coat the patties lightly with flour.
Heat oil in a non-stick frying pan.
Fry the crab cakes until cooked through and golden brown.
Serve with a green salad and chilli, lime and coriander mayonnaise
Ingredients:
4 slices white bread, make into breadcrumbs
250ml double cream
3 eggs, beaten
1 tbsp groundnut oil
1 tsp Tabasco sauce
1 red chilli, de-seeded and finely chopped
2 x 170g tins of white crab meat, drained
1 small bunch of fresh coriander, stalks removed and roughly chopped
2cm grated root ginger
juice of ½ lemon
2 spring onions, finely chopped
Plain flour
Oil for frying
