My mum gave me this recipe many years ago. I love it because it is so easy to make. It is so spicy and very tasty. It also looks impressive on the dinner table.

Cooking Instructions:
1. Heat the olive oil in a frying pan. Sweat onion and garlic without browning for 1 minute. Add the ground bee, chilli powder and cumin powder fry for 3 minutes. Stir well.
2. Add the chopped tomatoes, tomato puree, mixed herbs and 150ml water. Bring the sauce to the boil and simmer for about 20 minutes. Thicken the sauce with 1 teaspoon of cornflour blended with 1 tablespoon cold water. Season with salt and pepper.
3. Make the cheese sauce by heating the milk in a pan. Add in 50g cheese. Thicken the sauce with the rest of the cornflour blended with 2 tablespoon cold milk. Add beaten egg. Stir well. Season to taste.
4. In an ovenproof dish, layer the meat sauce, aubergine slices and potato slices.
5. Pour the cheese sauce over the top. Sprinkle the rest of the grated cheese on top.
6. Bake in a preheated oven180C/350F/ Gas 4 for 40 minutes until the top is golden brown.
Ingredients:
450g lean minced beef
5 fresh chopped tomatoes
1 teaspoon tomato puree
2 tablespoon olive oil
1 large aubergine (sliced and fried)
2 large cooked potatoes (sliced)
1 onion (chopped)
1 clove garlic (chopped)
1/2 teaspoon chilli powder
1 teaspoon cumin powder
½ cup chopped mixed herbs ( parsley, oregano, basil and thyme)
3 teaspoon cornflour
250 mls milk
1 beaten egg
100g matured cheddar cheese (grated)
Salt and pepper seasoning
Equipment:
A Rectangular overproof dish.
Recommended Wine:
Red : Cabernet Sauvignon
