This is a great warming winter casserole with a spicy orange twist to make it something special. No. of Servings:

Toss the beef in seasoned flour and brown in an ovenproof casserole
Remove from the pan and gently brown off the vegetables, starting with the onion and then adding the other vegetables for 5 minutes
Return the beef to the pan. Add the guinness and allspice. Grate in half a nutmeg. Bring to a gentle simmer on top of the stove then place in an oven at 130c for around 4-5 hours
Check occasionally and add more guinness or water if the mix looks as if it is drying out too much.
After 4-5 hours you can remove the pan from the oven and allow to cool if you don't want to eat immediately (it reheats very well). If you are ready to feast, then half an hour before you want to eat, add the grated zest of the orange and the juice and warm through.
