Pre-heat oven to 120ºC
Line a heavy roasting tin with tin foil, leaving plenty of spare foil around the edges of the tin.
Cut the lamb into medium sized chunks and place into the lines roasting tin. Add the potatoes, onions, carrots and bay leaves. Season with salt & pepper and drizzle all the ingredients with olive oil.
Take a second sheet of foil and place it over the top. fold the edges of the top and bottom sheets of foil together to form an airtight seal.
Place in the oven for 4 to 5 hours.

1.5kg Lamb Shank
6 Medium Sized Potatoes (unpeeled) - washed and cut into large chunks
4 Medium Onions - peeled and cut into quarters
4 Medium Carrots - washed and cut into large chunks
Milled Black Pepper
Salt
2 tsp Dried Oregano
4 Garlic Cloves
4 Bay Leaves
