chicken in garlic & tarragon cream sauce

Heat butter & oil in frying pan. Add chicken breasts & fry for approx. 5 mins on each side until light golden brown . Add garlic & fry for 1 minute. Pour over stock & add tarragon. Bring to boil, turn down heat & simmer gently for 15-20 mins. Remove chicken, then boil rapidly to reduce stock until thickened. Reduce heat & add cream, stir well & season to taste, but not too much salt if you have used a stock cube. Place chicken back in sauce & gently heat through. Serve with new potatoes or chips & vegetables or with rice.
