Seafood Mozzerella Pesto

my mum used to cook me this of her own invention. I have taken it on myself now as i love it so much. i prefer it to takeaways as its so tasteful. we just normally guess the amounts to put in but i have given you a rough idea of the weights/quantitoes needed. No. of Servings:

chop 1 medium onion, half a red pepper and half an orange or yellow pepper in to thin slices and finely chop 2 cloves of Garlic. slice 4 normal sized mushrooms. defrost about 150 grams of prawns and/ or 1 or 2 fillets of Salmon.
bring a medium sized saucepan of water to the boil add a dash of olive oil and then add 200 grams of pasta. add 1 tablespoon of Olive oile to a frying pan and once hot brown off the onions and garlic for a minute or so then add the prawn and/or Salmon and cook thqat through on a medium heat until its cooked throughout. then add the mushrooms and peppers and cook through for a few minutes stir frying all the time. then add a jar of red pesto sauce of your choice. cook this through until the pasta is cooked and drain the pasta off for a few minutes and then add it to the frying pan with the pesto. stir this through, add a bit of fresh basil to your taste if desired and then add a whole ball of mozzerella cheese. stir frequantly till the cheese has melted throuh and serve. voila! Bon Appetite!

I havent added a jar of red pesto sauce to the ingrediants im so sorry :(

2 tablespoons of olive oil

1 large ball of fresh mozarella OR 2 handfulls of grated mozzarella
Equipment:
1 large frying pan
1 medium saucepan for pasta
1 medium onion
