Background Info:
A delicious recipe that I serve regularly. It's great for vegetarians, kids love it because it is sweet and it freezes beautifully. It can also be made in minutes from kitchen staples.

Cooking Instructions:
1. Bring a large pan of water to the boil and cook the pasta for 10-12 minutes or according to the packet instructions.
2. Bring a second pan of water to the boil and boil the peas for 4-5 minutes or until tender.
3. Drain the peas and put 2/3rds of them in a food processor with the cream, parmesan, sugar and almost all the basil.
4. Turn on the food processor and process whilst drizzling the olive oil through the spout. Stop adding olive oil when the pesto is the consistency of double cream. Season to taste.
5. Drain the pasta and dress with the sauce. Add the reserved peas and toss well. Scatter over the remaining basil leaves and serve with lots of freshly ground black pepper.

5oog penne pasta
500g frozen petit pois peas
4tbsp olive oil
4-5tbsp coarsely grated fresh parmesan
5tbsp single cream
15g fresh basil
1tsp caster sugar
salt and pepper
