Background Info:
This is a great summer BBQ dish or can be cooked under a grill.
Quick to prepare, quick to cook but the longer the time marinading the better.

Cooking Instructions:
Add the lamb, rosemary, oregano, garlic and lemon juice & zest to a mixing bowl. Mix in the olive oil and leave to marinade for at least 2 hours (overnight is best).
Remove the lamb, but don't throw the marinade away.
Place a piece of lamb on a water-soaked skewer followed by a piece of pepper then a piece of onion. Repeat this until the skewer is full. With a bit of juggling you should be able to get 12 completed skewers.
Brush with some of the excess marinade and cook on a barbecue or under a hot grill until the meat is cooked through.
Serve with a lettuce, tomato and feta salad and tzatziki.
1.5kg leg of lamb, trimmed of fat, boned and cubed
3 sprigs of Rosemary - washed, de-stalked and chopped (dried rosemary also works)
1½ tbsp dried oregano
6 garlic cloves, crushed
3 lemons (the juice and finely grated zest of)
150ml olive oil
3 Medium Onions skinned and cut unto chunks
3 Green Peppers de-stalked, de-seeded and cut into chunks
Wooden skewers soaked in water

White : Pinot Grigio
