3 Bean Chilli

This is a great recipe which is easy to cook but full of flavour. It can be altered to suit preferance by using organic ingredients, or using different beans.

Cooking Instructions:
Heat a little oil in large pan/wok, add onions and peppers and cook until soft but not browned.
Add all ingredients and stir.
Bring to the boil then reduce heat, cover and simmer for 30-35 min.

Serve hot with rice and or tortilla chips
1 tbs olive oil
1 large onion, roughly chopped
3 red peppers, chopped
400g tinned toms
400g chilli beans
400g butter beans
400g chick peas
1 fresh chilli, deseeded and chopped
1 tsp chilli powder (more or less to suite taste)
2tsp ground cumin
Black pepper season

Rice and/or tortilla chips to serve
