Vegetable and Bean Chilli

In a hob to oven casserole dish gently heat the oil and cook the onion and garlic until soften.
Add all the remaining ingredients, stir bring to the boil. Reduce heat, cover and simmer for 45min until veg is soft to liking.
Great served with rice or jacket potato
Ingredients:
1 onion finely chopped
2 cloves garlic
100g fresh broccoli chopped into fairly small pieces
100g carrots, chopped
100g cauliflower chopped into fairly small pieces
400g organic chilli beans
400g organic chick peas
2 x 400g tinned toms
1 x small can sweetcorn
2tsp chilli powder
1tsp ground cumin
