Remove the Pigeon Breasts (you could ask your butcher to do it for you). Cut the breasts into thin strips.
Slice the mushrooms and chop the spring onion
in a bowl, mix 2 teaspoons of hendersons relish, 2 teaspoons of Soy Sauce, and a teaspoon of Piri Piri.
Pour the sauce over the mushrooms, onion and pigeon. leave to rest
Heat the Oil in a frying pan.
Fast fry all ingredients for 4 to 5 minutes, stirfrying.
