This is a quick veggie dish that I make when we are strapped for cash, so is excellent for those trying to save the pennies

This dish does not require set amounts, its all down to how strong you like your cheese, or how much potato you like.

Boil the peeled potatos and mash with the nob of butter

lightly fry the onion and leek until the onion turns clear (do not burn)

mix the leek/onion mix with the mash potato

crumble the oxo cube into the potato

grate and mix both lots of cheese

get a good glass oven dish with lid and layer the ingredients, potato - cheese - potato - cheese and use the halved tomatos to add some colour to the top.

Cook in the oven for half an hour on gas mark 5 for 20 minutes with the lid on, then remove the lid and continue cooking until golden brown.

can be served on its own or with a side of veg.

8 larger potatos peeled
half a block of cheap mature cheddar
half a block of cheap red leicester
one chopped white onion
one chopped leek
veggie oxo cube
pinch of salt
nob of butter/marg
3 cherry tomatos halved
