Braised Marinated Pork Cheeks with Shiitake Mushrooms

I learnt to cook this dish when I was living in Hong Kong a few years ago. It is absolutely delicious. It is also very economical to make.

Cooking Instructions:
1. Marinate pork cheeks in soy sauce, oyster sauce and brown sugar for 1 hour. Cut the soften mushrooms into quarters.
2. Heat the cooking oil in a heavy based pan. Fry the garlic and ginger without browning for 30 seconds. Add in pork cheeks, marinate and mushrooms.
3. Add in 100ml water. Bring to the boil and leave to simmer at slow heat for two hours till the pork cheeks are tender and the sauce is reduced and brown in colour.
4. Blend the cornflour with 1 tablespoon of cold water. Add that to the pork to thicken the sauce.
5. Season with salt and pepper.
6. Serve with boiled rice and garnish with sliced spring onions.
Ingredients:
8 pieces pork cheeks
12 shiitake dried mushrooms (soaked in water over night)
1 clove garlic (chopped)
1 teaspoon chopped ginger
1 tablespoon soy sauce
1 teaspoon oyster sauce
½ teaspoon brown sugar
1 tablespoon cooking oil
1 teaspoon cornflour
Salt and pepper
2 spring onions (sliced for garnish
