Banana Pancake Heaven

Background Info:
My husband developed this recipe by accident! On my birthday he made me some American pancakes with bacon and maple sauce for breakfast.
There were 2 left over and instead of wasting them he adapted this delicious pancake dessert for our dinner. It is postively yummy and now a regular dessert in our house! No. of Servings:

Sift the flour, baking powder, salt and sugar into a large bowl. In a separate bowl, whisk the milk, egg and melted butter.
Pour the milk mixture into the flour mixture and,beat until you have a smooth batter. Any lumps will soon disappear with a little mixing.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter (or two 2 tbsps). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
FOR THE SAUCE
Melt the butter, sugar and maple syrup in a pan. Once melted add the water and chopped bananas. Pour over the pancakes. Voila! American Pancake Heaven.

135g plain flour
1tsp baking powder
2 tbsp golden caster sugar
1/2 tsp salt
130ml milk
1 large egg
2tbsp melted butter
Banana topping:
4 bananas chopped (the riper the better)
2 tbsp maple syrup
2 tbsp sugar
2 tbsp butter (unsalted)
2 tbsp water Equipment:

Whisk Vegetarian
