Chocolate Fondant

Cooking Instructions:
1. Grease the ramekins well with butter and dust with cocoa powder and set aside in fridge

2. Melt the chocolate with the butter over a pan of simmering water - set aside to cool slightly.

3. Whisk the eggs and yolks together with the sugar (an electric whisk is best for this) until thick and pale. Sieve the flour into the eggs and mix well.

4. Gradually add the melted chocolate into the batter, beating well until a smooth batter is formed.

5. Divide the mixture into the 4 ramekins and refrigerate for at least 20 minutes or over night.

6. Place the fondants on a baking tray and cook in a pre-heated oven at 180oC for 10-12 minutes until a crust is formed on top and are coming away from the edges. Remove from the oven and allow to sit for a couple of minutes.

7. Carefully loosen the fondants and very carefully turn out onto a plate - serve with ice cream.

These fondants can also be cooked from frozen by adding an extra 5 minutes onto the cooking time.
