Place the grated chocolate into a heatproof bowl and place to one side, then put the rest of the ingredients into a saucepan and bring to the boil. As soon as the mixture boils, remove from heat and set aside to steep.

When the cream mixture has steeped for 20 minutes, place the saucepan back on the heat and bring back to the boil. Next, remove the pan from the heat and pour the hot cream mixture through a fine sieve onto the chocolate, then stir gently until the chocolate has melted.

Serve hot or cold.

Great served with ice-cream or homemade bread and butter pudding.
Ingredients:
160ml double cream
90ml full fat milk
130ml coffee
200g Menier dark chocolate, grated
35g golden caster sugar
1 tsp allspice
1 cinnamon stick
25ml rum
2 pieces orange peel ? 2? strips
