Wintery rhubarb and apple sponge pudding

This is my own recipe inspired by delicious winter puddings my mum used to make. It is so warming and deliciously English! No. of Servings:

Preheat oven to 180 degrees.
Peel core and slice thinly 4 British cooking apples. Chop 400g Rhubarb into inch long pieces.
Sizzle a couple of knobs of butter and some dried ginger in a frying pan. Then add in the apple slices and 150g golden caster sugar. Allow to reduce. Add 2 tablespoons of honey and 500mls water. Allow to reduce considerably. (5-8 mins)
Add the chopped rhubarb and mix the fruits together, simmer for a further 6 minutes.
Using an electric hand whisk, mix 4oz butter, 4oz caster sugar, 2 eggs, 1 tsp baking powder, and 2 tsps vanilla essence together in a mixing bowl until thourougly combined. Add 4 oz sifted plain flour and fold together until light and fluffy.
Put stewed fruits into a mid-depth ovenproof dish (oval ideally). Remove excess fruit juices if very watery and keep to serve as a sauce later. Pour on top the sponge mixture.
Bake for 20-25 minutes (until sponge is risen and golden)
