Blackberry & Coconut Traybake

Ideal for using up the glut of blackberries which you collect during 'blackberry season' No. of Servings:

Preheat oven 180 or 160 fan
Tip flour, oats and sugar into a large bowl.
Rub in butter using fingertips until only small pea size pieces remain.
Stir through the coconut.
Set aside a cupful of the mixture.
Stir the eggs into the mixture and spread over the base of the traybake tin.
Scatter over the blackberries.
Scatter over the reserved mixture.
Bake for 1 hour - 1 hour 15 mins until golden.
Leave to cool.
Lovely with cream or custard.

75g Dessicated Coconut
2 Medium eggs - beaten
