Gluten Free & Veggie Quorn Melts

Background Info:
I have been vegetarian for over 25 years and was recently diagnosed coeliac. Suddenly all my favourites such as pasta and pizza were banned and I have had to become a creative cook to build tasty meals without meat, wheat or gluten.
To compound the problem, my daughter has problems digesting dairy products so I often have to adapt even further by replacing standard dairy products with dairy free versions.

Cooking Instructions:
Carefully cut into one side of each of the Quorn fillets to form a hinged fillet.

Lay one quorn bacon flavour strip lengthways inside the 'hinged' quorn piece and top with slices of chees and crumbled feta.

Close the 'hinges' and wrap each fillet in the remaining bacon flavoured strips.

Place on a baking tray lined with greaeproof paper and sprinkle the olive oil over the wrapped fillets.

Cook for approx 20 minutes at Gas 5 until the bacon flavoured strips are browned and the cheese is melted.

I serve these with mashed potatoes and ribboned carrots and courgette but they are equally yummy if used as a warm filling for a snack inside a gluten free roll or pitta bread.
Ingredients:
One packet of frozen Quorn fillets - allow to defrost before use
One packet of quorn bacon flavour strips
6 thin slices of gouda cheese
50g vegetarian feta cheese
2 teaspoons of olive oil
Equipment:
If cooking for gluten free friends ensure they are aware that although the quorn is GF it is produced in a factory that handles gluten.
Prepare gluten free food away from any area where gluten is handled and keep tools and utensils separate.
