Baked Cod with Chorizo and Sauteed Potatoes

1. Peel and chop the potatoes into small chunks/cubes. Par boil for 3 minutes.
2. Drain the potatoes and drizzle a little olive oil over them. Add to a pre-heated frying pan with a little oil in. Gently saute the potatoes, regularly turning.
3. Whilst the potatoes are cooking, season the Cod with a little Salt and Pepper and place in a pre-heated oven at 180oC for 10-15 minutes, until the fish is soft and flakes away easily.
4. Add the chorizo and chopped pepper to the potatoes and warm through.
5. Serve the potatoes on a warmed plate and place the cod on top.

2 x Cod Fillets
1 x Chopped Red Pepper
100g Chorizo (cut into small cubes)
3 Large Potatoes
Salt and Pepper to season
