Boiled Fruit Cake

-Grease tin or line with foil
-Place mixed fruit, sugar, butter & water into a large pan and bring it to the boil, stirring regularly.
Reduce heat and simmer for 20- 25 mins stirring occasionally. Remove from heat and allow to cool.
-Put cherries into the flour with the fruit mixture.
-When fruit mixture is cool and in the same pan, add flour, then slowly add eggs and milk until all is absorbed.
-Pour mixture into tin and bake for 1.5 -2 hours at 150ºC. Use a skewer to check cake cooked through, it should pull clean.
-Wait until cool before removing from tin and cut.

115g (4 oz) butter/ hard marg
115g (4 oz) demerera sugar
125ml (4.5 fl oz) water
240g (8.5 oz) plain flour
1 teaspoon baking powder
85g (3 oz) chopped cherries
2 beaten eggs
140ml (¼ pt) milk
1 teaspoon mixed spice
