Cooking Instructions:
1. Make the filling by combining the breadcrumbs, basil, parsley, lemon rind, garlic, parmesan, chorizo, pepper and melted butter in a bowl.

2. Lay out the pastry and cut evenly in to 4. Then cut each piece in 2, making sure one half is slightly larger then the other.

3. Lay a chicken breast on the smaller half and spoon a quarter of the filling mixture on top. Brush around the edge of the pastry with water.

4. Fold the larger piece of pastry in half and cut snips into it. Open it out and lay on top of the chicken breast. Press the edges together well to seal them. Repeat on the other 3 chicken breasts.

5. Place the parcels on a lined baking tray and brush the parcels with the egg glaze. Sprinkle over the parmesan and bake in the centre of a pre-heated oven at 180oC for 25-35 minutes until the pastry has risen and is an even, golden colour.

6. Serve with new potatoes and salad.

4 Chicken Breasts
1 Beaten egg for glaze

For the Filling:
50g Breadcrumbs
Handful of Fresh Basil
Handful Fresh Parsley
Rind of 1 Lemon
1 Clove garlic, peeled and crushed
25g Grated Parmesan (extra for topping)
50g Chopped Chorizo
1 Chopped Red Pepper
30g Melted Butter
