Defrost the frozen haddock in the frypan or wash and leave the fresh haddock quite wet and turn heat on.
While the pan is heating finely chop the onion, tomatoes and celery and add to the pan which should just be starting to sizzle. Smear the cheese on the fish and add to pan then turn heat down, put lid on and leave to simmer for a few minutes.
Serve with nice brown bread and butter.

Frozen or fresh haddock fillet (about 4 ounces)

stick of celery with leaves,
one ounce of strong cream cheese Equipment:
