Spicy Beef & Mushroom Stifado

Background Info:
This dish comes from a love of both Mediterranean and Indian cuisine. I have always loved the Greek dish Stifado, this is a variation of this dish.
Slow cooked - without much effort - the beef simply falls apart. It's easy to experiment with too - you can just use herbs from the cupboard to your taste.

In a large pan/casserole dish with lid fry the onions in the oil for 3 minutes till browned. Add the garlic for a further minute.
Next, fry the beef till browned on all sides. Add the tomatos and stir for 2 minutes. Add some water just until the beef is covered (not too much water as a nice thick sauce is ideal). Mix in the rest of the ingredients except for the mushrooms and shallots.
Cover and transfer to the middle of a preheated oven at 180c for one and a half hours. Then add the mushrooms and shallots, cook for another hour.
For best results stir frequently during cooking (approx every 30 minutes).
Serve with boiled rice.
This dish is also lovely with rosemary roasted parsnips, carrots and baby potatoes.

1 Kg./2.2lb. of beef, cut into 3cm./1-1/4" cubes
1 Onion
2 Medium Sized Red Chilli's (chopped)
6 Garlic Cloves (chopped/crushed)
1 tsp coriander seeds
1 tsp crushed black pepper
4 cloves
2 tins of chopped tomatos
1 hand full chopped basil
1 beef stock cube
500g./1-1/4lb. of baby shallots
4 sprigs of fresh rosemary
4 Tbls. olive oil
150g button mushrooms
1 Kg./2.2lb. of beef, cut into 3cm./1-1/4" cubes
