this is my own take on a recipe i found online ive altered it over time to what i believe is to be one of the most mouth watering meals ive had.

place chopped garlic, olive oil and goats cheese in to a bowl and mix until it forms a spreadable paste.
take a sharp knife and make slits in the tops of your chicken breast, deep enough to fill with the paste if you accidentaly cut through it doesnt matter as they will be wrapped up.
once you have filled the chicken breasts (you can use any of the left over goats cheese spread to spread on the tops of the chicken) wrap the pancetta/bacon around making sure to cover the slits as best as possible and tuck underneath the breasts.
place in an over proof dish and cover with a little olive oil and put in the oven for 20 mins (or till juices run clear) at 250 temp.
whilst chicken is cooking, peel sweet potatos and place in a pan of boiling water and bring to the boil, then simmer till they have become soft enough to mash. Cook your choosen veg adjusting time to suit.
once the sweet potatoe is ready mash with either a little butter or butter and creme fraiche and serve with your chicken and veg.
2 large skinless chicken breasts
75g goats cheese
1-2 cloves of garlic
11-2 tablspn of olive oil
6 streaks pancetta/ 4 streaks smoked bacon
1 large sweet potato
veg ( i prefer green beans)
sharp knife
oven proof dish

White : Any White Wine
