Cooking Instructions:
Heat a deep casserole dish on the hob, add the oil and the sausages and brown all over. Remove the sausages and add the onion, garlic, leek, lardons, thyme, oregano and bay leaf to the dish and cook until the onion and leek is soft but not browned. Add the beans and the stock and bring to a simmer. Add the sausages to the casserole dish along with the mustard, salt and pepper. Sprinkle the top with breadcrumbs and put the casserole in the oven. Bake uncovered at 180°C for 20 minutes. Push the breadcrumbs down a little into the sauce and bake for 20 minutes more until the topping is crisp and golden.
Serve with crusty warm bread.
Ingredients:
1 onion, finely chopped
6 spicy Italian sausages, cut into 4 pieces
350g pack Creative Cooks Tuscan Bean Mix with Pearl Barley,
2 garlic cloves, crushed
500ml chicken or vegetable stock
½ tsp thyme
½ tsp oregano
1 bay leaf
1 leek, sliced thinly
150g smoked lardons
2 tbs oil
1 tbsp wholegrain mustard
Sea salt & ground black pepper
Handful of fresh breadcrumbs
Recommended Wine:
Red : Chianti
