I use this recipe when friends are over for dinner, i used to love baked alaska and decided to experiment to find something similar to this, a total surprise to the pallet. Everyone has loved it so far.

Cooking Instructions:
To make the flan case.
Sieve flour, salt, sugar together , make a well in centre and drop in the egg and margarine use a round blade knife and knead until it becomes soft pliable dough form it into a round and place in a bag put in the fridge leave for twenty minutes.
Then take out Roll to fit flan dish bake blind for twenty minutes gas 6/7.

Then make the filling drain a can of crushed pineapple, keep the juice, mix cornflour in the juice and add to the fruit bring it to the boil keep stirring bring it to the boil and then simmer for couple of minutes.
Take of the heat then add sugar and the lemon juice beat in the egg yolk return to a gentle heat cook slowly until mixture thickens. Leave to cool, before adding it to the flan case.

Make a meringue with the whites thats left over adding 50g caster sugar per white of egg whisk until stiff like peaks.
place scoops of icecream on top of the flan and pineaple mixture thats been cooled,then cover totally with the meringue. Bke in a hot oven approx 5mins until peaks turn golden. Serve to your family and friends enjoy.

Flan case
300g plain flour
pinch of salt
1 egg
200g margarine
50g caster sugar

Filling
Large can of crushed pineapple
1 teaspoon of cornflour
1 egg yolk
50g caster sugar
2 teaspoons lemon juice
required ammount of ice cream
Meringue to cover.
