A nice light vegetable pie which is quick and easy.

Cooking Instructions:
Chop all the vegtables, place in an oiled roasting tin and cook in oven on 180 for 15 minutes.

While vegetables in oven make up pastry using the flour and butter.when the pastry is looking like a crumble mix add a splash of water and mix again until you have nice soft pastry.

After 15 minutes take vegetables out the the oven and place in a bowl. Add some mixed herbs and sprinkle in the grated cheese. Mix together using a spoon then transfer into a greased pie dish.

Roll out your pastry and place on top of the vegetables.
Place in oven on 180 for approx 20 minutes or until pastry golden brown.

Serve with a summer seasonal salad.

Filling:
250g mushrooms
100g courgettes
100g onions
1 red pepper
1 green pepper
200g grated cheese
mixed herbs

Shortcrust Pastry:
200g plain flour
100g butter
splash of water
