Roasted Baby New Potatoes with Chorizo & Chimichurri

Pre heat the oven to 160°c.
Firstly, parboil the new potatoes over a medium heat for approximately 10/15 minutes or until they are tender but still holding their shape.

Meanwhile, start making the sauce. Put a medium size pan on the heat, add the olive oil and once hot add the diced onion and celery. Sweat on a low heat for approximately 5 minutes or until they are soft but not coloured. Add the Chimichuri paste and cook for a further 2/3 minutes then add the sherry vinegar, tinned tomatoes and water and cook for 10 minutes on a low heat.

Whilst the sauce is cooking, place an oven-proof frying pan onto a medium heat and once hot add the sliced chorizo and cook for approximately 3 minutes or until they start to soften and the oil is coming out of the chorizo. Cut the potatoes in half and add to the frying pan and stir well ensuring everything is mixed well (the potatoes should be well coated with the oil from the chorizo sausage).

Put the chorizo & potatoes into the oven and cook for 10 minutes or until they are nicely browned and crisp.

Whilst they are cooking carefully tip your sauce into a blender or use a hand blender and whiz until the sauce is smooth. Season if necessary then pour into a jug and set to one side.

Transfer the potato & chorizo to a plate lined with kitchen paper to drain then place in a serving plate and pour the sauce over the top.

Sprinkle with flat leaf parsley and extra virgin olive oil.

If you have any left over sauce, use as a sauce with pasta or as a base sauce for a homemade pizza.

75ml Water
200g Tinned Tomatoes
Extra Virgin Olive Oil - good lug
1 White Onion (diced finely)
2 tbsp Good quality Sherry Vinegar
Salt- good pinch
Cracked Black Pepper Pinch
