Cooking Instructions:
Heat the toasted sesame oil in a heavy- based saucepan then add the diced shallots, jungle paste and cook for 5 minutes or until softened.

Add the chicken and continue to cook on a medium heat for 6/8 minutes stirring gently.

Add the coconut milk, chicken stock and bring to the boil. Turn the heat down to medium and add the green beans and baby corn and simmer for 10-15 minutes or until the chicken is cooked and the vegetables are tender.

Add the tiger prawns, fish sauce and coconut cream and simmer for a further 5 minutes or until the prawns are cooked and the sauce has reached a thick consistency.

To serve:
Bring a pan of water to the boil, then remove from the heat. Add the rice noodles and leave to stand for 1 minute. Strain the noodles and place in a large bowl. Pour the curry over the noodles and garnish with crushed peanuts, coriander and spring onion.
Ingredients:
250g Chicken Breast (sliced)
10 Raw Tiger Prawns
4 tbsp Epicure Jungle Paste
3 tbsp Toasted Sesame Oil
2 tbsp Fish Sauce
400ml Chicken Stock
400ml Coconut Milk
2 tbsp Coconut Cream
200g (440g pre-cooked) Rice Noodles
3 Shallots (peeled & finely diced)
120g Baby Corn (cut ½ length ways)
100g Green Beans (cut in half)

Garnish:
3 tbsp Crushed Peanuts
2 Spring Onion (thinly sliced)
3 tbsp Fresh Coriander Leaves
