Jungle Cod Fish Cakes

Cut the fish into small pieces and place it in a food processor together with the jungle paste, coriander, spring onion & fish sauce. Blend to a semi smooth paste, then add the coconut milk and egg and blend again.
Place the mixture into a bowl, finely slice or chop the green beans and add to the mixture plus the salt and place in the fridge for 2-3 hours.
Pour the Sunflower oil into a frying pan and place on a medium heat (do not leave the pan unattended). Whilst the oil is heating up, shape the fish paste into small little patties with the help of a spoon, you should get about 8 patties from the mix (approx 50g per pattie).
Carefully lower the patties into the hot oil and fry until they are golden brown and crisp. Cook on both sides.
Once cooked, remove from the oil and drain on kitchen paper.
To serve: place patties on a serving dish and garnish with fresh coriander and a shop bought sweet chilli dipping sauce.

2 tbsp Epicure Jungle paste
1 tbsp Fish sauce
1 Egg - Beaten
40g Green French beans
2 tbsp Fresh coriander (chopped)
4 Spring Onion (chopped)
4 tbsp Coconut Milk
150ml Sunflower oil (for frying)
½ tsp Salt
Sweet chilli dipping sauce to serve
