Baked Cod Loin with Lebanese Spices

Pre-heat the oven to 200°c/gas mark 6.
Cut 2 square sheets of greaseproof paper, 40cm x 40cm. Place one cod loin on each sheet. Dividing the rest of the ingredients by half (half for each cod loin) place the Lebanese paste over the top of the cod, then the shallots, followed by the lemon slices and the butter. Season with salt and pepper and add the chopped coriander, and drizzle with olive oil.
Lift the edges of the greaseproof paper and scrunch them together to create a tight bundle. Then secure with ovenproof string and lift the parcels onto a baking tray.
Place in the oven to cook for 25 minutes.
Take out and leave to stand, still sealed in the parcel for 2 minutes as the fish will continue to cook in the residual heat.
Serve the parcels sealed, allowing the diners to open them up themselves.

2 tbsp Olive Oil
4 thin slices Lemon
2 tbsp Fresh Coriander (chopped)
Salt (to taste)
Pepper (to taste)
½ Shallot (finely sliced)
20g Butter (10g per cod portion)
