Lebanese Spiced Aubergine & Tahini Salad

To cook the aubergines, place them on a roasting tray, spoon 1 tbps of olive oil over each aubergine and place under a pre-heated medium hot grill and cook for 40-50 minutes. Turn frequently with metal tongs until the flesh is soft and smoky and the skin is brunt all over.
Remove the aubergines form the heat. Cut the aubergine in half-length ways and scoop out the flesh leaving the black skin. Put the flesh into a colander and leave to drain for 15-20 minutes.
Once drained, chop the aubergine flesh finely and transfer to a medium sized mixing bowl and add all the remaining ingredients, mix well with a whisk. Taste and adjust the seasoning, adding more Lebanese paste if needed. ideally the salad should have a sour and slightly sweet flavor with a generous spicy kick.
To serve, spoon the salad into a medium shallow bowl and scatter with coriander leaves and drizzle with the rest of the extra virgin olive oil.

5 tbsp Tahini Paste
2 tbsp Greek Yoghurt
1 tbsp Lemon Juice
2 tbsp Fresh Coriander (chopped)
½ tsp Salt
Black Crack Pepper - good pinch
2 tbsp Pomegranate Molasses
5 tbsp Extra Virgin Olive Oil
