North African Bean & Feta Salad

Heat the olive oil in a large saucepan, add the diced onion and cook on a medium heat stirring frequently for 5 minutes or until the onions have softened. Add the Lebanese paste and cook for another 2-3 minutes to release all the aromatic flavors then add the tomato puree and cook for a further 1 or 2 minutes.
Add the tinned tomatoes, water and all of the beans/peas, stirring to ensure all of them are mixed through. Bring to the boil, then turn the heat down and simmer for 15 ? 20 minutes or until the beans are soft but still have a bite. Taste and add salt and pepper accordingly.
To serve:
Turn out into a large pre-warmed dish, crumble the feta cheese and sprinkle the parsley and the feta over the top and finish pouring some extra virgin olive oil over the top.
(This can also be served cold).

230g Cooked Butter Beans140g Green Long Beans (top, tailed & cut in half)
150g Sugar Snap Pea?s (cut in half)
4 tbsp Olive Oil
1 medium White Onion (peeled and diced)
2 tbsp Tomato Puree
400g Tinned Chopped Tomatoes
1 tsp Salt
½ tsp Cracked Black Pepper
3 tbsp Chopped Flat Leaf Parsley
130ml Water
120g Feta Cheese
