Shiitake & Chestnut Mushroom Soba Noodle Salad

Make the dressing first by heating the vinegar, salt and palm sugar in a small saucepan until the salt and sugar has dissolved. Remove from the heat and add the Massaman paste and allow to cool. Once cool add the chopped fresh coriander.
Start heating ½ the oils in a large frying pan on a medium heat, add the sliced shallots and cook for approximately 2 - 4 minutes or until soft and browned in colour. Remove with a slotted spoon to retain the oil in the frying pan and place the shallots in a medium sized bowl and put to one side.
Next heat the oil again and lay the mushrooms in the frying pan, do not stir. Turn the heat up high and cook for about 5 minutes. Only then give the pan a good shake and now add the green beans, give a little stir and cook for a further 3 minutes, taste and season with salt and pepper. Now place the mushrooms and beans in with the cooked shallots and again set aside to cool down.
Place a saucepan of water on the heat and bring to the boil and add a generous pinch of salt. Once boiling, add the noodles to the saucepan and keep stirring to prevent the noodles sticking together ? cook for approximately 5 minutes. Now drain and refresh under ice-cold water. Once cool, drain and place noodles in a salad spinner giving them a good spin to remove as much excess water as possible.
Now in a large bowl toss the noodles with the dressing, shallots, both mushrooms, beans and rocket and mix well to ensure all the noodles are well coated. Place the salad in a nice big serving bowl or plate and garnish with the spring onion & coriander.

2 tbsp Epicure Massaman Paste
1 tsp Salt
3 tbsp Palm Sugar
2 tbsp Toasted Sesame Oil
Juice of ½ a Lime
1 tbsp Fresh Coriander
Noodle Salad:
100g Shiitake Mushrooms (sliced)
90g Chestnut Mushrooms (cut into ¼)
90g Green Beans (top & tails removed, cut in1/2)
3 Spring Onions (thinly sliced)
2 tbsp Groundnut Oil
2tbsp Toasted Sesame Oil
250g pack Soba Noodles
1 handful Rocket
2 tbsp picked fresh Coriander leaves
Salt - a good pinch
Black pepper - pinch
