Cream of carrot and curried apple soup

Heat the butter in a large saucepan; add onions, carrots, apple and garlic.
Cover pan and sweat on a very low heat for 30 mins (do not brown).
Stir in curry paste or powder and cook for a couple of minutes before adding the stock.
Bring to the boil and season.
Cover the pan and simmer until the carrots are tender.
Liquidise or strain and return to a clean pan.
Stir in the cream and serve immediately accompanied by warm crusty baguette or garlic bread.

40g Butter
110g Onion (diced)
450g Carrots (peeled and chopped)
1 eating Apple (cored, peeled and chopped)
2 cloves Garlic (crushed)
2 tsp Curry Paste or Powder
900ml Chicken Stock ( can be replaced by vegetable stock for vegetarians)
Salt and Ground Black Pepper - to taste
150 ml Double Cream or Crème Fraiche
Vegetarian
