Preheat the oven to 140c (275F) Gas1

Crush biscuits in a food processor then add melted butter and mix well. Press the mixture firmly into the cake tin, Bake for 5 mins, remove and let coo. Grease the sides of the tin above the crust.

In a large bowl, beat the cream cheese and sugar with an electric whisk. Add the lemon zest and juice, sour cream and vanilla extract. Mix until smooth and add the eggs one at a time until well combined. Put the flour in last and mix again. Pour the mixture into the cake tin. Bake for 70 minutes until it is firm and the top is turning light golden. Let sit in the oven with the door open until cook (about 2 hours), then refrigerate for at least 6 hours or overnight. Place your favourite fresh fruit on top and serve.

Can this recipe be converted to cups and ounces? I am assuming chocolate biscuits are chocolate cookies and digestive biscuits are graham crackers, is this correct?
Ingredients:
200g digestive biscuits or plain chocolate biscuits
60g melted butter
1kg Cream Cheese
250g Caster Sugar
Grated zest and freshly squeezed juice of 1 unwaxed lemon
200ml Sour Cream
2 Tablesp Vanilla Extract
5 Eggs
4 Tablespoons Plain Flour
Equipment:
A spring form cake tin about 20cm diameter
Food Processor
Electric Whisk
