Chestnut and Chickpea stuffing

Put the chestnut purée in a food processor with the oil and the sherry until it is smooth. Then add the chickpeas and purée briefly so some of the chick peas are still chunky (if you want a totally smooth stuffing blitz until smooth)
Remove from the processor, add sunflower seeds and season to taste.
You can use the stuffing inside a turkey, bake it in little balls or use it as a pâté on toast.

4 tbsp sunflower oil
2 tbsp medium sweet sherry 100g tinned chickpeas
