If you need a hit of cake and sugar this is easy. Great for kids to help and eat.

Preheat oven to 180C/350F/Gas 4 and lin 2 x 12 hole fairy cake tins with paper cases.
- Whisk eggs and sugar together in bowl until light and fluffy
- Carefully fold in flour and butter and vanilla if you have it
- Pour mixture carefully into paper cases, 2/3 full
- Bake cakes for 15-20 minutes or until golden brown on top and a skewer inserted into one of the cakes comes out clean. Set aside and cool for 10 minutes on a wire rack before removing from tin
- Make buttercream, beat butter until soft, add half the icing sugar and beat until smooth, be careful to start with
- Add remaining icing sugar, cocoa powder and 1 table spoon of milk and beat until creamy. Beat in more milk if needed to loosen slightly.
- Once cakes are cool take a small sharp knife and cut a small well out to put the icing into, or just put icing on top.
- Decorate cakes if you want, with icing sugar, chocolate buttons, coloured sprinkles etc

225g/8oz sugar (caster best)
225g/8oz self rasing flour
225/8oz butter, melted
Vanilla essence if available
Icing
110g/4oz butter, softened
170g/6oz icing sugar
55g/2oz cocoa powder, sifted
1-2 tbsp milk Equipment:
If you don't have self raising flour use 1.5 teaspoons = 125g plain flour
