Pour off chicken or turkey juices from the roasting tray.
Put the tray with the remiaing juices on the hob over a low heat and add the flour and mix well until the flour and juices come together. Then add the chicken stock a little at a time ensuring that there are no lumps.
Then add the Vermouth and Chicken Reduction, season and stir, leaving to simmer for 10 minutes or until at the the preferred thickness is reached.
Ingredients:
200ml Chicken Stock
120g Epicure Vermouth and Chicken Wine Reduction
½ tbs Flour
Sea Salt (to taste)
Ground Black Pepper (to taste)
