Onion, Sage and Cranberry stuffing

Melt the butter in a pan, add the onions and cook on a low heat for 20 minutes, then add the cranberries and increase the heat before adding the wine. Simmer until the liquid has reduced then add the breadcrumbs and the sage.
Stir well and season.
In a greased baking dish pour the stuffing mixture, pressing down then sprinkle the porridge oats on top and drizzle with olive oil.
At this stage you can leave in the fridge for up to 3 days before cooking.
Place in a pre heated oven (200oc) and bake for 30 minutes until the top is golden and crispy.
