Pre-heat oven to 200oc.
Boil parsnips for 10 minutes, drain and mix with the rest of the ingredients in a large roasting tin and season
Roast in the oven for 45min, turning occasionally until golden brown.

800g Parsnips - peeled and cut in halve
3tbsp Balsamic
5tbsp Olive Oil
2tbsp Brown sugar
1 red onion
3 sprigs of rosmary
Salt and Pepper - to season
