Christmas Mess with Cranberry, Chestnuts & Orange Compote

Cooking Instructions:
Put all of the compote ingredients (except the water and cornflour) into a small saucepan over a moderate heat. Bring to the boil and cook for about 10 minutes or until the cranberries have burst and are soft.

Dissolve the cornflour in the water before adding to the saucepan. Reduce the heat to medium and stir until the compote has thickened.
Remove from the heat and cool.

Pour the maple syrup into a small saucepan and heat, add the sliced chestnuts to, stir well and cook for 2-3 minutes or until the chestnuts have caramelized, remove from the heat and set aside.

Whisk the cream and the caster sugar together in a large bowl until very thick using an electric whisk.

To assemble the Mess, break the meringue into pieces and fold into the cream with two-thirds of the chestnuts and cranberry compote, gently fold together but careful not to over-fold.

Pile the mix onto a large serving plate/bowl, scatter the rest of the chestnuts on top and spoon the rest of the cranberry compote over.

To serve:
Grate the orange zest over the top with a good dusting of icing sugar.
Ingredients:
For the compote
250g Fresh or Frozen Cranberries
1 Orange (juice & zest)
1 Lemon (zest)
2 tsp Vanilla Essence
100g Golden Caster Sugar
2 tbsp Water
1 tbsp Cornflour
1 Cinnamon Stick

For the mess:
200g Epicure Italian Chestnuts
200g Cooked Meringue
500ml Double Cream
80g Caster Sugar
2 tbsp Icing Sugar
1 Orange (zest)
3 tbsp Maple Syrup
