Fried Mediterranean Beans with Feta, Spinach & Sumac

Add the butter and olive oil to a large frying pan on a moderate heat, and then fry the beans for 3-4 minutes or until the skins start to brown slightly. Add the garlic, spring onions, chili and cook for a further 2-4 minutes.
Remove from the heat and season with salt and pepper. Allow the beans to cool slightly, add the rocket, drizzle the lemon juice on top, and sprinkle over the crumbed feta.
To serve: Sprinkle the sumac over the top. Finish with a good drizzle of olive oil.

350g Epicure Mediterranean Bean Mix
40g Butter
4tbsp Olive Oil
6Spring Onions (sliced thinly)
1 clove Garlic (peeled & crushed)
1 Red Chili (sliced thinly)
2tbsp Lemon Juice
75g Feta Cheese (crumbed)
1½tsp Sumac
Handful of Rocket
Sea Salt (to taste)
Ground Black Pepper (to taste)
