Place the red onions in a medium bowl and pour over the red wine vinegar, sprinkle with sea salt, then leave for 10 minutes so the onion softens.

Now add the Tuscan Bean Mix, garlic, sundried tomatoes, extra virgin olive oil, pepper, the herbs and rocket and mix well. Taste and adjust the seasoning.

To serve, place the salad on a large plate or bowl, mix in the gorgonzola, sundried tomatoes and pomegranate seeds as you build up the salad on the plate. Drizzle with a little more olive oil.
Ingredients:
350g Epicure Tuscan Bean
1 Small Red Onion (peeled & thinly sliced)
¼ Cucumber (cut in ½ and deseeded)
80g Gorgonzola (roughly chopped or pulled)
1tbsp Chives (finely chopped)
1tbsp Dill (finely chopped)
1tbsp Flat Leaf Parsley (finely chopped)
1clove Garlic (peeled & crushed)
2 Sundried Tomatoes (cut into quarters lengthways)
2tbsp Red Wine Vinegar
3tbsp Pomegranate seeds
Sea Salt
Ground Back Pepper
3tbsp Extra Virgin Olive Oil
Good handful Rocket
