Ratatouille and Chicken Bake

Preheat oven to 180oc
Heat oil in a large casserole dish (hob to oven proof dish), brown the chicken thighs on both sides, remove from pan and set aside.
Add the par-boiled potatoes and gently fry for 5 minutes. Return the chicken, pour over the Ratatouille and oregano and gently mix together.
Bake in oven for 30 minutes or until chicken is cooked through, stir half way through.

375g tin Epicure Ratatouille
4 Chicken Thighs
500g new potatoes - peeled and par boiled
1tsp Oregano
1 tbsp Olive oil
