Lentil & Spinach Curry

Heat the olive oil in a wok and fry the onion and garlic together until soft. Stir in the curry paste and continue to cook for 2 minutes.
Add the tomatoes, stock and lentils and bring to the boil before reducing the heat, simmer for 10 minutes.
Gently stir through the spinach, heat through then remove from heat and stir in the coriander.
Serve with naan breads.
Ingredients:
400g tin Epicure Bijoux Verts Lentils - drained
380g tin Epicure Leaf Spinach -drained
400g tin Epicure Chopped Tomatoes
1 Red Onion ? diced
2 Garlic Cloves - crushed
2 Tbsp Balti Curry Paste
150m Vegetable Stock
20g Coriander
Olive Oil
Naan Bread - to serve
